This plant is located on the lowest level of the bakery building. In one part of this plant there are dough mixers, a pneumatic flour feed scale, several raw material weighing scales and a water dispenser. The rest of the plant is divided into several sections, as follows:

– Production of special breads

– Production of lean pastries and puff pastry

– Production of fatty pastries

In the special bread department where the production is semi-automatic or manual, a number of different types of products are being produced. Each of these products is prepared according to a strictly defined recipe and specification, as well as a defined mode of fermentation and baking. The breads produced this way have a different appearance, different structure of the environment, different taste and smell which are characteristic for the declared product.
